Vegan Italian Chopped Salad with Crispy Shallots and Creamy Basil Dressing
Vegan Italian Chopped Salad with Creamy Basil Dressing đ„ Just like the ones they have in steakhouses! đ The crispy shallots, hearts of palm, and basil dressing make this! I had never made crispy shallots before, and it was so easy.
Just add 1 cup avocado oil and 3-5 shallots, sliced 1/8th inch thick, into a saucepan. Put the pan on medium heat for about 10 minutes, stirring frequently, and making sure they donât burn. Drain in a mesh sieve and blot with a paper towel. Sprinkle with sea salt and thatâs it! So delicious and crunchy! A great replacement for bacon in a salad! đ„ The basil dressing is from @goop and is DELICIOUS. I swear @gwynethpaltrow makes the best dressings. I had to make 2 batches because I used the first one as a dip for my radish slices, and ate it all! đł I highly recommend doubling or tripling the recipe, and using it for your raw veggies all week! Ingredients: đ± 1 1/2 Tbsp vegan, or regular mayo đ± 1 Tbsp fresh chopped basil đ± 2 Tbsp extra-virgin olive oil đ± 1 tsp red wine vinegar đ± 1 tsp Dijon mustard đ± Salt & pepper to taste Hearts of palm are a great replacement for eggs, and would be great in a vegan cobb salad! I also used sliced celery, romaine, avocado, and some stunning radishes from @rodgersgreensandroots ! It was a great lunch! đ
