The Balanced Apron Autumnal Salad
THE most delicious winter salad I’ve ever had thanks to a recipe from @the_balancedapron ! You are truly a genius for this one! 😍🥗 I usually buy her salads from @nutsnberriesatl but today I decided to try and make it at home! Best decision ever! And the dressing is to die! 🤩 This salad has a kale and spring mix base, and is topped with roasted sweet potatoes, sliced Granny Smith apples, sliced red onion, pomegranates, walnuts, and cracked pepper. I made a big batch of these roasted sweet potatoes this morning, just to keep in the fridge. They always get eaten! 🍠 For the dressing, I minced one shallot, and mixed it with EVOO, Apple cider vinegar, Dijon mustard, and salt to taste in a mason jar. Definitely keep this dressing on hand for future recipes! A millet grain bowl with this would be delicious! 😋 Happy Sunday everyone! Ingredients:
Kale/spring mix combination
Roasted sweet potatoes
Pomegranate seeds
Sliced red onion
Sliced Granny Smith apple
Toasted walnuts
Cracked pepper
For the dressing:
Extra-virgin olive oil
Apple cider vinegar
1 Tbsp Dijon mustard
1 shallot, minced
Recipe:
1. Place all dressing ingredients in a mason jar, and shake to combine.
2. Garnish salad, and pour dressing over. Save additional dressing for future recipes. Enjoy!
