Lobster Rolls on Romaine Lettuce Boats with Avocado

Lobster Rolls with avocado on romaine lettuce đŸ„‘đŸŠžđŸ„Ź Sometimes the hardest thing about taking pictures of your food is having to wait to eat it. This was one of those times!!! đŸ˜©đŸ˜©đŸ˜©



Lobster is one of my favorite things to eat because it’s high in protein and low in cals! It’s also super easy to cook. This is a half a pound of meat, and it filled 3 lettuce boats to the brim! 🩞

Ingredients:


3-4 lobster tails, or 1/2 lb lobster meat

1 1/2 lemon

2 Tbsp sea salt

1 Tbsp mayo

2-3 celery stalks, thinly sliced

1 Tbsp fresh chives, chopped

1/2 avocado sliced

3-4 romaine lettuce leafs

Sea salt & pepper to taste


For the lobster, cook in enough boiling water to cover lobsters for 10-20 minutes, depending on size. Add sea salt and juice from 1 lemon to give the water an ocean taste.


Let cool, remove meat, and mix with mayo, celery, chives, squeeze of lemon juice, and sea salt and pepper to taste. Layer romaine boats with sliced avocados, and lobster salad. So delicious!! 😋
