If you want to make the easiest, most delicious salad ever - here it is! I first had this when I was in Italy at the @monasterosantarosa hotel. So incredible, especially with all those delicious lemons and figs they had on property! 😍🍋
Fresh arugula base from @rodgersgreensandroots, the sweetest figs from @littlefoxfarm, Georgia olive oil, pine nuts, a squeeze of fresh lemon juice, and sprinkle of sea salt. So insanely good and brings me right back to being on the Amalfi coast! Haha I WISH! 🤣
Option to add shrimp to this salad as well. That is part of the original recipe, and I plan to do that next time now that I have my orders from #sweetsavannahshrimp! 🥗🍤

Recipe (Serves 2):
4 cups arugula
10 figs, sliced in halves or quarters
2 Tbsp pine nuts
2 Tbsp good olive oil
Pinch of flaky salt
Add arugula, figs, and pine nuts to a bowl. Squeeze juice of 1 lemon over the salad and drizzle over the olive oil.
Sprinkle with flaky salt and toss to combine.
